They are mainly used to know what pages you've visited, whether you are logged in, any language preferences, or other bits and pieces to help you get the best experience out of a website.

I give you just the one solitary cookie - and it's only there to satisfy my own ego by knowing how many people come to my site. That's it. The cookie's only purpose is to know which pages you visit, when you visit them, and if you come back. No IP address, no location, no Google account - the only thing I know about you is that you visited this page on this date.
